Creamy Tortellini Sausage Soup
This dish felt so intimidating going into it but DAMN was it easy … and full of flavor! The perfect fully loaded soup for those chilly nights.

Serving Size: 4-6 Hearty Bowls
Ingredients
4 Lee’s Gourmet Italian Sausages, with casing removed
1/2 White Onion, chopped finely
2 Sticks Celery, chopped finely
2 Tbsp. Flour
4 Garlic Cloves, minced
4 cups chicken broth (or just under)
1 Can Diced Tomatoes, some juices drained
2 Heaping Cups 3 Cheese Tortellini
1 Cup 1/2 & 1/2 Cream
2 Cups (packed) Baby Spinach, fresh
Salt & Pepper to taste
Directions
Add the sausage meat to a large soup pot. Sauté over medium-high heat, stirring occasionally, for 7-10 minutes, or until the sausage is browned all over. Remove from pot and set aside in a paper towel lined bowl to drain excess fat.
Leave a little of the sausage fat in the pot, add the onion and celery. Cook approx. 6-7 minutes or until softened. Add the flour and garlic and cook for a minute, stirring constantly.
Slowly add the chicken broth and stir until the flour has completely dissolved.
Add the canned tomatoes and Italian seasoning to the pot. Also add the sausage back in. Increase the heat to high and bring the soup to a gentle boil.
Once boiling, add the tortellini and reduce heat so it gently simmers. Cook for 5-6 minutes.
Stir in the cream and cook for another 5 minutes then add in the spinach and season with salt & pepper or additional Italian seasoning. Serve with fresh shaved parm and fresh cracked pepper.
