Italian Sausage Stuffed Peppers

Remember when you were younger and you hated peppers … yeah well now you are an adult and you LOVE peppers.

Cook Time: 45 minutes

Serving Size: 4 Pepper Halves

Ingredients

  • 1 Pack of Lee’s Gourmet Italian Sausage, casing removed

  • 2 Peppers, halved and seeds removed

  • 2 Cups Mushrooms, chopped

  • 1/2 Red Onion, chopped

  • 1 Cup Tomatoes, chopped

  • 1-2 Cups of Rice, cooked

  • 1 Cup Pasta Sauce of choice

  • 2-3 Tsp Italian Seasoning

  • Salt & Pepper to taste

  • 1/2 Cup Mozza Cheese, shredded

Directions

  • Pre-heat oven to 375F. Take the beef Italian sausage and remove the casing the crumble and cook in a hot skillet.

  • Remove the meat, add the chopped veggies to the pan with some oil and sautéed up with our Italian Seasoning as well as some good ol S&P! Add the garlic and cook until fragrant, approx 1 minute.

  • While the veggies are cooking, place the halved peppers cut side down on a baking sheet and drizzle with some oil. Bake approx. 15-20 minutes or until softening. Remove from oven and set side.

  • Add the sausage back in then add in some cooked rice and the pasta sauce.

  • Scoop that mixture into halves of peppers very generously, top with a couple pinches of cheese, bake until fully melted and then broil to brown the cheese!
