Creamy Buffalo Ranch Chicken Meatballs

We don’t make meatballs very often, in fact this is only the 4th or 5th time I have made them from scratch. We had a bad experience with some badly undercooked chicken ones in the past that has sort of turned me off of them. I decided to put my big girl panties on and tackle the meatballs again … I was going to do it my way though. That’s exactly what I did and we were not disappointed. Super easy and a creative way to whip up that ground chicken for a dinner or snack that doesn’t include pasta.

Serving Size: 20-30 Meatballs

Ingredients

  • 1 Lb. Ground Chicken

  • 3/4 Cup Kraft Ranchers Choice Dressing

  • 1/4-1/2 Cup Franks Red Hot Sauce

  • 3/4 Cup Panko Bread Crumbs

  • 1 Egg

  • 2 Tsp. JamDinners Buffalo Wing Rub

  • 2 Tsp. Garlic Powder

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

Directions

  • Pre-heat Oven to 375F degrees. In a medium sized bowl mix in all ingredients except the ranch, buffalo seasoning and hot sauce. If the chicken mixture is a little too sticky, add more bread crumbs, a little at a time.

  • Spray cooking spray onto a cooking sheet. Form chicken mixture into 1.5 -2 inch balls and place on baking sheet. Bake for 30-40 minutes or until chicken is fully cooked.

  • Combine ranch and hot sauce into a clean medium sized bowl with the buffalo wing spice, mix well and set aside. Once the chicken meatballs are fully cooked, remove the meatballs from the oven and add to the ranch/hot sauce mixture. Toss well until all meatballs are generously covered and serve right away.

  • Serve as a snack for a sports themed party or serve with rice and cooked veggies for a full meal.
