Leftover Fried Rice

If you are like me then you make rice the same way you make pasta …. way too much left over. I always make way more than I should because of a fear of running out, which obviously never happens. Well sometimes plain white rice left over isn’t the meal you were looking for. We have a really easy way to take that cooked leftover rice and turn it into a delicious fried rice!

Serving Size: 3-4

Ingredients

  • 4 Cups Rice, cooked

  • 3 Large Eggs, scrambled

  • 1 Cup Carrots, chopped

  • 1 Cup Frozen Beans & Corn

  • 3 Green Onions, chopped and separated

  • 4 Tbsp. Low Sodium Soy Sauce

  • 2 Tbsp. Sesame Oil

  • 4 Cloves Garlic, minced

  • 1 Tsp. Ground Ginger

  • Salt and Pepper to taste

Directions

  • In a large wok, heat the oil on medium heat hen add carrots and the whites of the green onions. Cook about 5-6 minutes or until carrots soften. Add garlic and ginger, cook another 2-4 minutes or until very aromatic. Reduce heat slightly

  • Add rice, eggs and frozen beans/carrots to wok. Mix well. Add Soy Sauce and salt/pepper. Cook up about 5-6 minutes. Add remaining green onion and mix well. Cook up another couple minutes and then serve. Add more soy sauce if desired.
