Chopped Kale Winter Salad

Prep Time: 15-20 minutes

Cook Time: 45-60 minutes

Serving Size: 1 big ass salad

Salad Ingredients

  • 4-6 Tbsp. Evoolution Black Madagascar Fused Oil

  • 2-3 Tsp. Dijon Mustard

  • 2-3 Tsp. Tahini

  • 1-2 Tsp. Maple Syrup

  • 1-2 Tsp. Apple Cider Vinegar

  • 1-2 Tsp. Lemon Juice

  • Salt & Pepper to taste

Ingredients

  • 1 Bunch of Kale, finely chopped

  • 1-2 Cups Wild Rice, cooked and cooled

  • 1-2 Cups Chopped/Cubed Butternut Squash

  • 2-3 Tsp. Evoolution Leek Infused Olive Oil

  • 3/4 Cup Feta Cheese

  • 1/2 Cup Pickled Red Onion

  • 1/4 Cup Pumpkin Seeds

  • Salt & Pepper to taste

Directions

  • Pre-heat oven to 400F. Toss the chopped butternut squash with the leek infused olive oil then season with salt and pepper. Cook approx 45-60 minutes or until fully cooked and browning nicely.

  • Combine all dressing ingredients together and whisk or shake well. Place in fridge until needed.

  • Once the butternut squash has cooked and cooled, toss all salad ingredients together in a large bowl and drizzle with desired amount of dressing.

  • Toss well and serve cold.
