Chopped Kale Winter Salad

Serving Size: 1 big ass salad
Salad Ingredients
4-6 Tbsp. Evoolution Black Madagascar Fused Oil
2-3 Tsp. Dijon Mustard
2-3 Tsp. Tahini
1-2 Tsp. Maple Syrup
1-2 Tsp. Apple Cider Vinegar
1-2 Tsp. Lemon Juice
Salt & Pepper to taste
Ingredients
1 Bunch of Kale, finely chopped
1-2 Cups Wild Rice, cooked and cooled
1-2 Cups Chopped/Cubed Butternut Squash
2-3 Tsp. Evoolution Leek Infused Olive Oil
3/4 Cup Feta Cheese
1/2 Cup Pickled Red Onion
1/4 Cup Pumpkin Seeds
Salt & Pepper to taste
Directions
Pre-heat oven to 400F. Toss the chopped butternut squash with the leek infused olive oil then season with salt and pepper. Cook approx 45-60 minutes or until fully cooked and browning nicely.
Combine all dressing ingredients together and whisk or shake well. Place in fridge until needed.
Once the butternut squash has cooked and cooled, toss all salad ingredients together in a large bowl and drizzle with desired amount of dressing.
Toss well and serve cold.
