Chipotle Corn on the Cobb

We pulled together a delicious ‘compound butter’ and froze it to use at later times and when you are going to BBQ Corn on the Cobb …. this is the later time you’ve been waiting for! I capture the recipe for the butter below but please note you do not want to use all of it for the corn lol.

Compound Butter Ingredients

  • 1 Cup Butter (not margarine)

  • 3 Tbsp. Chipotle in Adobo

  • 2 Tsp. Garlic, minced

  • 1 Tsp. Cilantro

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

  • 1/2 Tsp. Parsley Flakes

Corn Ingredients

  • 4 Corn on the Cobb

  • 2-3 Tsp. Chipotle Compound Butter, room temperature

  • 1-2 Tsp. Fresh Parsley

  • 1 Tsp. Salt

Chipotle Compound Butter Directions

  • Allow the butter to soften enough to manipulate. combine all ingredients then wrap tightly in parchment paper and freeze.

Corn on the Cobb Directions

  • Cook the corn over medium heat on the BBQ, rotating throughout cooking.

  • Remove from the heat, brush with the compound butter the sprinkle with salt and fresh parsley.

  • Pair with delicious smoked chicken or just about any damn meat you can think of for the summer months!
