Chili Lime Steak & Corn Salad

We got the idea for this salad from Sam the Cooking guy! So of course we took the idea and made our own salad! It turned out amazing and we used a great cut of meat! We scooped 1 really large top sirloin from Save On and it was so tender, juicy and large enough to feed both of us! Making the dressing from scratch was super easy and you’ll notice I say 1-2 tsp in a lot of the measurements because it is more about preference with taste!

Serving Size: 2 Salads

Chili Lime Dressing Ingredients

  • 1/4 Cup Olive Oil

  • 1/4 Cup Lime Juice

  • 2-3 Tsp. Honey

  • 1-2 Tsp. Garlic Powder

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Chili Powder (or Cayenne Powder)

  • 1-2 Tsp. Pepper

  • 1 Tsp. Chipotle EVOO Oil (*optional! use extra cayenne pepper for heat if desired)

  • 1 Tsp. Soy Sauce

  • 1 Tsp. Worcestershire Sauce

  • 1 Tsp. Paprika

Salad Ingredients

  • 4-6 Cups of Romain Lettuce, washed and ripped

  • 1-2 Steaks (depending on size), seasoned with salt and pepper, cooked to desired redness and thinly sliced

  • 1 Corn on the Cobb, grilled on the BBQ to achieve grill marks, then cut off the cobb

  • 3/4 Cup Cherry Tomatoes, halved

  • 1/2 Avocado, sliced

  • 1/4 Red Onion, sliced

  • 1/2 Cup Feta Cheese, crumbled

Directions

  • Cook the corn in the husk on the BBQ until fully cooked, remove husk and then return to the grill to allow for the grilling of the kernels.

  • Add the seasoned steak to the BBQ and cook until desired redness, flipping half way through.

  • Fill two bowls with lettuce then add the avocado, onion, tomatoes and feta.

  • Cut the corn off the cobb and add to the salad.

  • Remove the steak from the grill, slice thinly then add to the salad and drizzle with desired dressing! Add a quarter of a lime and squeeze on top for some extra zest if desired.
