Chili Lime Southwest Salad

We love a good salad lineup in the summer. We often eat salads every night in the summer and just switch up the protein or seasoning and obviously the salad ingredients. This Chili Lime SW Salad is perfect for a hot summer dinner and so easy to make.

Dressing Ingredients

  • 1/4 Cup Evoolution Arbosana EVOO

  • 1 Tbsp. Evoolution Baklouti Green Chili Infused Olive Oil

  • 1 Tbsp. Evoolution Key Lime White Balsamic Vinegar

  • 1-2 Tsp. Garlic Powder

  • 1 Tsp. Paprika

  • 1 Tsp, Honey

  • 1/2 Tsp. Kosher Salt

Salad Ingredients

  • 4 Chicken Thighs, seasoned as desired and grilled to perfection (we used our Signature Spice Blend)

  • 4 Cups Spring Mix

  • 1/2 Cucumber, sliced

  • 3/4 Cup Cherry Tomatoes, halved

  • 1/2 Cup Cheddar Cheese

  • 1/2 Cup Corn & Black Bean mixture

  • 1/4 Cup Red Onion, sliced

  • 1/4 Cup Pickled Jalapeno

Directions

  • Combine all dressing ingredients together in a small mason jar and shake well. Set aside.

  • Evenly split all salad ingredients into 2 salad bowls, top with grilled chicken then drizzle desired dressing on top of each.
