Pesto Chicken Skewers

Looking for a unique spin on a chicken kebob? Throw a little pesto on them and lets go.

Prep Time: 20 minutes

Cook Time: 35 minutes

Serving Size: 3 Kebobs

Ingredients

  • 4 Chicken Thighs, cubed

  • 2-3 Tbsp. Basil Pesto

  • 1-2 Tsp. Evoolution Calabrian Pesto EVOO

  • 1-2 Tsp. Evoolution Garlic Infused EVOO

Directions

  • Add the cubed chicken, to a bowl with the pesto and EVOO. Mix well and allow to marinate in the fridge for at least 2 hours.

  • Pre-heat the BBQ to 450F. Skewer the chicken cubes evenly on each skewer and place on the top rack of the BBQ so the cook slower ensuring the pesto doesnt burn. Cook about 30-35 minutes or until fully cooked depending on your BBQ.

  • Serve with a pasta - maybe a tomato parm pasta …. just sayin.
