Caprese Chicken

When you eat as much chicken as we do, you have to get creative and this caprese chicken is bang on, healthy & delicious.

Ingredients

  • 2 Chicken Breast

  • 1 Small Pack of Cherry Tomatoes

  • 2 Roma Tomatoes, sliced

  • Sliced Mozza Cheese

  • 1-2 Tbsp. Evoolution Neapolitan Herb Dark Balsamic Vinegar

  • 2 Tbsp. Evoolution Garlic Infused Olive Oil

  • 1 Tsp. Honey

  • 2-3 cloves Garlic, minced

  • Salt & Pepper to taste

  • Fresh basil for garnish

Directions

  • Pre-heat oven to 400F. Combine the oil, balsamic vinegar, honey and garlic cloves in a small bowl with desired S&P. Mix well.

  • Pat dry the chicken breast and lightly season with S&P. Brush the vinegar/oil mixture on all sides of the chicken the lay out the roma tomato slices on top. 

  • Lay out the cherry tomatoes all around the chicken in the baking dish and drizzle with the remaining oil/vinegar mixture.

  • Bake about 30-35 minutes or until the chicken reaches a minimum temp of 165F. Remove the chicken from the oven, top the roma tomato slices with the sliced mozza and then broil on LO until golden brown.

  • Remove from the oven and sprinkle the chopped basil on top and serve on a bed of spaghetti.
