Broccoli Mushroom Chicken Casserole

We are hitting the colder days and that means getting creative with casserole style dishes or ‘winter meals’. BUT that doesn’t mean we’ve forgotten about Summer. Sometimes we want a little but of both. This dish is perfect for that. You get the warmth/comfort feeling from the pasta but it is loaded with fresh veggies and perfectly seasoned chicken to balance out the dish. #perfection

We even used a multicolored vegetable Fusilli to add some color to the dish.

Ingredients

  • 2 Chicken Breast, chopped

  • 3 Cups Dry Fusilli Pasta

  • 2-3 Cups Crimini Mushrooms, sliced

  • 1 Cup Shredded Cheese

  • 1/2 Cup Cream

  • 1 Large Broccoli Crown, chopped

  • 1/4 White Onion, chopped

  • 1 Can Condensed Garlic Mushroom Soup

  • 1 Tbsp. Margarine

  • 2-3 Tsp. Garlic Powder

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

Directions

  • Pre-heat oven to 350F degrees. Begin cooking pasta until tender in a large pot of boiling water. When there is about 5-6 minutes of pasta cooking left, add in the chopped broccoli to allow it to cook right in the pasta water.

  • Once the pasta and broccoli are both fully cooked, drain water and set aside.

  • Cook chopped chicken breast in a large frying pan. Lightly season with salt, pepper & garlic powder. Once chicken is fully cooked, remove from heat and set aside.

  • Using the same frying pan, add 1 tbsp. margarine and once melted add in the white onion and lightly season with salt/pepper and allow to lightly saute about 5-6 minutes. Add in the mushrooms and continue cooking over medium heat.

  • Once mushrooms are cooked, add in the condensed soup and cream. Mix well. Lightly season with salt, pepper & garlic powder again. Mix well.

  • Once you are happy with the flavor add in the pre-cooked chicken and 1/2 the cheese then mix.

  • Grabbing a medium sized casserole dish pour in the pasta/broccoli mix as well and the mushroom mix from the stove. Combine really well in the casserole dish. Top with remaining cheese. Bake 12-15 minutes or until cheese is nicely melted. Sprinkle with pepper after removing from the oven and serve with garlic bread if you are really going for the cozy meal feeling, but believe me … you won’t need it!
