Buffalo Chicken Blue Cheese Wraps

Blue Cheese is a “love it or hate it” kind of food … and in this house, we are big fans of it! Mix it together with freshly cooked buffalo chicken and crisp lettuce/onion and you’ve got a delicious lunch!

Ingredients

  • 1 Chicken Breast

  • 2 Tortillas

  • 1.5 Cups Crisp Romaine Lettuce

  • 1 Cup Bacon, chopped

  • 1/2 Cup Red Onion

  • 1/2 Cup Blue Cheese Dressing

  • 1/3 Cup Blue Cheese, crumbled

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

  • 1-2 Tsp. Garlic Powder

Buffalo Sauce Ingredients

  • 5-6 Tsp. Franks Hot Sauce

  • 2-3 Tsp. Valentina’s Hot Sauce

  • 2-3 Tsp. Sriracha Hot Sauce

  • 1 Tsp Ranch Dressing

Directions

  • Combine the hot sauce ingredients together and set aside.

  • Pre-heat BBQ to 500F degrees. Season chicken breast with salt, pepper & garlic powder then place on the BBQ. Cook until internal temperature is 165F degrees or higher, flipping half way through.

  • Once chicken is fully, lightly brush both sides of the chicken with the hot sauce, allow to soak in about 2-3 minutes then remove from the BBQ.

  • Slice the chicken, toss in remaining hot sauce then allow to cool in the fridge. You want the chicken to cool because you are going to grill the wraps in the panini press and you don’t want to lettuce to wilt!

  • Once the chicken has fully cooled, plug in your panini press (or heat up your frying pan with a little oil).

  • Lay out the tortillas and begin to add toppings. Start with a drizzled layer of sauce, then blue cheese. Split the chicken evenly between both tortillas, add the bacon then top with lettuce and onion.

  • Tightly roll each of the tortillas, folding in the sides as you go.

  • Lightly greasy the panini press, then lay the wraps in and press down with the top. You want your panini press really hot so that it creates the sear marks instantly. Hold down the lid for about 1-2 minutes then release.

  • Remove the wrap from the panini press, cut in half and serve with fries or salad.
