Corn Bread

When whipping together a true BBQ meal there are certain side dishes that come to mind .. coleslaw is one for sure and the other in our opinion is corn bread! We pulled together this easy corn bread recipe that you will want to whip up each time you BBQ or smoke meats because it is so simple!

We pulled a classic version together but also added jalapenos for an extra kick!

Serving Size: 6 Individual sized Corn Bread

Ingredients

  • 2/3 Cup Flour

  • 1/2 Cup Corn Meal

  • 1/4 Cup Sugar

  • 2 Tsp. Baking Powder

  • 1/2 Tsp. Salt

  • 1/2 Cup Milk

  • 1/3 Cup Vegetable Oil

  • 1 Egg, beaten

  • 1/2 Jalapeno, finely chopped (optional)

  • Cooking Spray

Directions

  • Pre-heat oven to 400F degrees. Combine all dry ingredients together in a bowl. mix well. Add the wet ingredients one at a time and mix well.

  • Ensure there are no lumps. Spoon into lightly greased muffin tins.

  • I usually scoop out 3 portions into muffin tins, then with the remaining batter I add in the jalapeno, mix well and divide the remaining into the 3 other cups. This allows variety incase not everyone in your house is a fan of the heat. I also always save a couple extra pieces of jalapeno for on top for display.

  • Cook 10-12 minutes or until tops have risen and are almost golden brown.
