Buffalo Chick Pea Lettuce Wraps

What a great spin on a vegetarian meal. Packed with heat and protein. What more could you really want?

Serves: 6-8 Lettuce Wraps

Ingredients:

  • 6-8 Romaine Lettuce Leaves

  • 1 Can of Chick Peas

  • 3-5 Tbsp. Franks Hot Sauce

  • 1-2 Tsp. JamDinners Buffalo Wing Dry Rub

  • 1-2 Roma Tomatoes, chopped

  • 1 Jalapeno, chopped

  • 1/4 Red Onion, chopped

Directions

  • Drain the chick peas and rinse then dry. Pour into a bowl and add the Franks hot sauce, buffalo seasoning and ranch. Mix well.

  • Scoop the chick pea mixture into the romaine lettuce leaves and then top with the vegetables. Enjoy! If you want it to be creamier add 1 tsp of ranch to the chick pea mixture.
