Greek Yogurt Chocolate Chip Muffins

It is hard to find a ‘healthy’ muffin but this recipe is pretty darn close. It requires very minimal sugar and we use Greek yogurt in the recipe as well. You can use non-fat Greek yogurt if you would like but in my opinion they don’t turn out quite as good. This is a great recipe to whip up for your kids on a Sunday afternoon and you can be happy with their snack choices! It is even a great recipe for that husband of yours that enjoys snacking way too much!

Serving Size: 12 Muffins

Ingredients

  • 1 & 3/4 Cups Flour

  • 1 & 1/4 Cup Greek Yogurt

  • 3/4 Cup Chocolate Chips

  • 2/3 Cups Sugar

  • 1/2 Cup Margarine

  • 3 Large Egg Whites

  • 1-2 Tsp. Vanilla Extract

  • 1/2 Tsp. Baking Soda

Directions

  • Preheat oven to 375F degrees. Line a muffin tin with muffin liners.

  • Combine flour and baking soda in a medium bowl and lightly mix. In a different bowl, cream together the sugar and margarine using a hand mixer until fully mixed and lightly crumbly.

  • In a third bowl combine the egg whites and vanilla then add to the margarine/sugar bowl and mix well.

  • Add the yogurt to the margarine bowl and combine. Slowly add the flour mixture in and combine on low speed using the hand mixer.

  • Fold in the chocolate chips and lightly mix in by hand or using a spatula. Spoon even portions of the mixture into all 12 lined muffin tins. Fill each tin approximately 3/4 full.

  • Bake for 15-18 minutes or until you can insert a toothpick and it comes out clean. Remove from oven and place on a cooling rack. Cool fully (approximately 2 hours) prior to eating.
