Greek Yogurt Chocolate Chip Muffins
It is hard to find a ‘healthy’ muffin but this recipe is pretty darn close. It requires very minimal sugar and we use Greek yogurt in the recipe as well. You can use non-fat Greek yogurt if you would like but in my opinion they don’t turn out quite as good. This is a great recipe to whip up for your kids on a Sunday afternoon and you can be happy with their snack choices! It is even a great recipe for that husband of yours that enjoys snacking way too much!
Serving Size: 12 Muffins
Ingredients
1 & 3/4 Cups Flour
1 & 1/4 Cup Greek Yogurt
3/4 Cup Chocolate Chips
2/3 Cups Sugar
1/2 Cup Margarine
3 Large Egg Whites
1-2 Tsp. Vanilla Extract
1/2 Tsp. Baking Soda
Directions
Preheat oven to 375F degrees. Line a muffin tin with muffin liners.
Combine flour and baking soda in a medium bowl and lightly mix. In a different bowl, cream together the sugar and margarine using a hand mixer until fully mixed and lightly crumbly.
In a third bowl combine the egg whites and vanilla then add to the margarine/sugar bowl and mix well.
Add the yogurt to the margarine bowl and combine. Slowly add the flour mixture in and combine on low speed using the hand mixer.
Fold in the chocolate chips and lightly mix in by hand or using a spatula. Spoon even portions of the mixture into all 12 lined muffin tins. Fill each tin approximately 3/4 full.
Bake for 15-18 minutes or until you can insert a toothpick and it comes out clean. Remove from oven and place on a cooling rack. Cool fully (approximately 2 hours) prior to eating.
