Wild Porcini Mushroom Quesadillas

We love meatless meals when they involve alllllll the mushrooms like these quesadillas!

2 Large Quesadillas

Ingredients:

  • 4 Large Tortillas

  • 1-2 Cups White Mushrooms, sliced

  • 1-2 Cups Crimini Mushrooms, sliced

  • 1-2 Cups Old Cheddar Cheese, shredded

  • ½ Cup Green Onion, chopped

  • 1-2 Pinches of Evoolution Wild Porcini Sea Salt

  • 1-2 Tsp. Evoolution Herbs de Provence Olive Oil

  • 1-2 Tsp. Evoolution Butter infused Olive Oil

  • Pepper to taste

  • Garlic powder to taste (or real garlic is preferred with this baby)

Directions

  • Heat the oil in a pan over medium heat and add the mushrooms. Season with the porcini salt, pepper and garlic powder (or use real garlic and add right near the end). ** if using real garlic, also add a tsp of butter and add to the hot pan in the middle of the mushrooms at the same time as the garlic.

  • Cook until almost fully cooked and remove from heat.

  • Lightly wipe the pan and add a little more oil then lay down a tortilla, top generously with ½ the cooked mushrooms and ½ the cheese as well as ½ the green onions then top with the other tortilla. Cook until the tortilla browns then flip the whole thing and repeat.

  • Complete this for the other half of the ingredients.

  • Cut into quarters and enjoy! Drizzle with a little hot sauce if desired too
