White Chocolate Chip Pudding Cookies

Who doesn’t love a chocolate chip cookie? Well have you ever baked them and found that they are too dry once they are cooled? I figured out the secret ingredient to MOIST AND SWEET cookies. It is Pudding. Who would have guessed? Adding Pudding to the recipe and making a few other adjustments sure makes a difference. The first time I made them for the Mr. he thought they were under cooked and didn’t really like them …. but guess who was asking for them the weeks following?

Serving Size: 24 Cookies

Ingredients

  • 2 1/4 Cups Flour

  • 1/5 Cups White Chocolate Chips

  • 3/4 Cup Butter, softened

  • 3/4 Cup Brown Sugar

  • 1/4 Cup Sugar

  • 2/3 Pack of Vanilla Pudding

  • 2 Eggs

  • 1 Tsp. Baking Powder

  • 1 Tsp. Vanilla Extract

Directions

  • Preheat oven to 350F degrees and line a cookie sheet with parchment paper or lightly grease. Sift together flour and baking soda then set aside.

  • Cream together butter and both sugars until light and fluffy. Add pudding and mix well again. Finally add eggs and vanilla then mix. Slowly add the dry mixture of flour and baking powder in, mixing as you go. Lastly add chocolate chips and lightly mix.

  • Roll into 2 inch balls on greased baking sheet leaving enough room for expansion. Bake for 8-12 minutes or until just lightly set. Remove from oven and cool then enjoy.
