Valentine's Day Smartie Cookies
We were going for Smartie Monster Cookies but they didn’t quite turn out ‘monster’ they did however .. turn out SO darn good! Such a simple recipe and a fun treat to do with your kids even leading up to Valentine’s Day.
Ingredients
2 Cups Flour
1 Cup Margarine
1 Cup Pink and Red Smarties
3/4 Cup White Sugar
3/4 Cup Brown Sugar
2 Large Eggs
2 Tsp. Vanilla Extract
1 Tsp. Baking Soda
1 Tsp. Salt
Directions
Preheat oven to 375F degrees. Line two baking sheets with parchment paper or a silicone mat.
Sift together the flour, baking soda, and salt .
In a standing mixer bowl, fitted with the paddle attachment, cream butter, sugar, light brown sugar, and vanilla until fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition.
Add the sifted flour mixture to the mixer bowl and combine some more. Finally, add the smarties and mix lightly with .
Using an ice cream scoop, drop mounds onto prepared baking sheets. Make sure to leave plenty of space for cookies to spread during baking. (do not flatten the cookies)
Bake for 9-12 minutes, until cookies are just set but still slightly undercooked.
Remove the cookies from the oven, press in additional smarties if desired then cool and transfer to wire rack to cool completely.
