Valentine's Day Smartie Cookies

We were going for Smartie Monster Cookies but they didn’t quite turn out ‘monster’ they did however .. turn out SO darn good! Such a simple recipe and a fun treat to do with your kids even leading up to Valentine’s Day.

Ingredients

  • 2 Cups Flour

  • 1 Cup Margarine

  • 1 Cup Pink and Red Smarties

  • 3/4 Cup White Sugar

  • 3/4 Cup Brown Sugar

  • 2 Large Eggs

  • 2 Tsp. Vanilla Extract

  • 1 Tsp. Baking Soda

  • 1 Tsp. Salt

Directions

  • Preheat oven to 375F degrees. Line two baking sheets with parchment paper or a silicone mat.

  • Sift together the flour, baking soda, and salt .

  • In a standing mixer bowl, fitted with the paddle attachment, cream butter, sugar, light brown sugar, and vanilla until fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition.

  • Add the sifted flour mixture to the mixer bowl and combine some more. Finally, add the smarties and mix lightly with .

  • Using an ice cream scoop, drop mounds onto prepared baking sheets. Make sure to leave plenty of space for cookies to spread during baking. (do not flatten the cookies)

  • Bake for 9-12 minutes, until cookies are just set but still slightly undercooked.

  • Remove the cookies from the oven, press in additional smarties if desired then cool and transfer to wire rack to cool completely.
