Red Velvet Cookies
Almost everyone I know loves red velvet .. and in my opinion, how could you not? I was always intimidated by red velvet and the idea of making them from scratch by creating my own recipe seemed crazy. Then I started to research and realized .. it is not that hard! These cookies are perfection. They are soft and chewy and the perfect colors for LOVE DAY!
Ingredients
1 1/2 Cup Flour
3/4 Cup White Chocolate Chips
1 Large Egg
1/2 Cup White Sugar
1/2 Cup Margarine, room temp
1/3 Cup Brown Sugar
2 Tbsp. Cocoa Powder
2-3 Tsp. Red Food Coloring
1.5 Tsp. Cornstarch
1 Tsp. Vanilla
1/2 Tsp. Baking Soda
1/4 Tsp. Salt
Directions
In a large bowl whisk together the flour, cocoa, cornstarch, baking soda & salt. In a separate large bowl beat the butter and sugars together until light & fluffy. Beat in the egg, vanilla extract and food coloring.
With the mixer on low, beat in the flour mixture about 1/2 at a time. Stop using the mixer, add in the chocolate chips and gently mix using a spatula.
Cover the bowl with plastic wrap and refrigerate for at least 3 hours, you can even refrigerate overnight if that works better.
When ready to bake, preheat the oven to 350F degrees. Line 2 cookie sheets with parchment paper or a silicone baking mat.
Scoop dough into balls of about 1-1.5 tablespoon in size and place 2 inches apart on the lined cookie sheets.
Bake 1 cookie sheet at a time on the middle rack of the oven for 11-13 minutes, or until the tops look just set.
Remove from the oven and place a few white chocolate chips on the tops of each cookie. Cool on the cookie tray for 10 minutes, before transferring to a wire rack to continue cooling.
