Tuscan Pasta Salad

On the Tuscan train right now thanks to the EVOO Tuscan Oil we have been using … oh my! So whipping together Tuscan chicken and Tuscan salmon means there is an opportunity for a side dish also …. so we present to you, Tuscan Pasta Salad!

Pasta Salad Ingredients

  • 3 Cups Cooked Pasta (approx. 1.5 cups uncooked, cooked as per packaging)

  • 1 loose Cup Spinach

  • 1/2-3/4 Cup Parmesan Cheese, grated

  • 1/2 Cup Sun-dried Tomatoes, chopped

  • 1/2 Cup Red Pepper, chopped

  • 1/4 Cup Sliced Black Olives

  • 1-2 Tsp. Pepper

Tuscan Dressing Ingredients

  • 1/2 Cup Olive Oil

  • 1 Tbsp. White Vinegar

  • 1-2 Tsp. EVOO Tuscan Oil

  • 1 Tsp. Salt

  • 1 Tsp. Oregano

  • 1 Tsp. Pepper

  • 1 Tsp. Garlic Powder

Directions

  • Combine all dressing ingredients in a small bowl and mix well. Allow to sit in the fridge for at least 1 hour.

  • Combine all pasta salad ingredients in a large bowl and mix well. Add a pinch or two of the parmesan cheese at the end!
