Sausage & Jalapeno Eggs Benny
Just a kick ass beauty of an Eggs Benny for Dad’s day! My dad like spicy things so why not take the classic eggs benny and spice it up a bit right? This breakfast has just the right amount of heat and is one of the easiest eggs benny to make.
Ingredients
2 English Muffins
4 Eggs, poached
4 Round Sausage Patties, cooked as per packaging
1/2 Pack McCormick’s Hollandaise Sauce, prepared as per packaging
1/2 Can Pickled Jalapeno Slices (including 1-2 tsp of the juices)
1 Tsp. Pepper
Directions
Pre-heat oven to 350F degrees. Using a 6-cup muffin tin, spray 4 of them with cooking spray then spoon 1 tbsp. of water into the bottom of all 6. Crack a single egg into 4 of the 6 cups (you still want water in the others so they don’t burn). Bake for 10-12 minutes.
While the eggs are cooking, toast the english muffins and cook the sausage patties as per packaging directions.
Also prepare the hollandaise sauce as per packaging. Once the hollandaise is prepped, add in a tsp or 2 of the pickled jalapeno juices and mix well.
Once everything is cooked, prepare the bennies, starting with placing the sausage patties on the toasted english muffins then the eggs then drizzle with hollandaise, add a couple jalapeno slices to the top and season with pepper.
You could even add or use fresh jalapeno too! Get on it boyyyy!
