Sweet Potato Fries
I don’t have any great intro for you around these except they are delicious. I have been spending a lot of time lately researching plant based diets and it’s got me thinking about making choices. I am by no means a vegetarian but I do find myself wanting to incorporate a plant based diet more and more. These sweet potato fries are just 1 dish I incorporate into our meal planning to help reduce the amount of meat we eat in this house.

Ingredients
2 Medium Sized Yams
1/2 Cup Water
2-3 Tbsp. Corn Starch
2 Tbsp. Vinegar
2 Tbsp. Salt
1-2 Tsp. Garlic Powder
1-2 Tsp. Pepper
Olive Oil Spray
Directions
Cut Yams into fry sized portions, about 1/2 inch wide and 3-4 inches long. Place all cut portions in a large pot of water with the vinegar and a tsp of salt and boil for 6 minutes.
Pre-heat oven to 475F degrees. Combine the corn starch and 1/2 cup of water in a large bowl.
Using tongs, grab the sweet potatoes and place in the corn starch/water bowl. Lightly cover the fries and then using the tongs lay them out on a metal rack on a baking sheet. Ensure the rack has been sprayed.
Combine the salt, pepper & garlic powder together then sprinkle on both sides of each fry.
Bake for 15 minutes, flip the fries and add additional seasoning if needed then return to the oven and back for 15 more minutes.
Remove the fries from the oven and serve with our Garlic Aioli.
