Sweet & Sour Cauliflower with Rice
If you have not tried our Sweet & Sour Pork recipe you definitely should … but if you are a vegetarian then this is actually the recipe for you! We took the basics of our S&S Pork recipe and used baked cauliflower instead and it is just as tasty!
Baked Cauliflower Ingredients
1 Head of Cauliflower, chopped/crowned
1 Cup Flour
1 Cup Milk
2 Tsp. Garlic Powder
1 Tsp. Salt
1 Tsp. Pepper
Sweet & Sour Sauce Ingredients
¼ Cup Ketchup
¼ Cup Vinegar
¼ Cup White Sugar
¼ Cup Water or Chicken Stock
2 Tbsp Plum Sauce
1 Tbsp Corn Starch
Salt to taste
Other Ingredients
1 Cup White Onion, sliced
1 Cup Pineapple, cubed
1 Cup Red/Green/Yellow Peppers, sliced
3-4 Cloves of Garlic, minced
2 Tbsp. Oil
Directions
Pre-heat over to 450F degrees and line a baking pan with parchment paper. Combine flour, milk, garlic powder, salt and pepper in a bowl and mix well.
Once cauliflower has been rinsed, dried and chopped into bite size pieces dip pieces one at a time in the flour mixture allowing excess mixture to drip off. Then place coated piece onto the baking pan and repeat for all other pieces.
Bake for 30 minutes then remove from oven.
While you are cooking the cauliflower pieces, combine all sauce ingredients in a medium sauce pan and cook over medium heat until bubbling begins.
Turn to low and slightly simmer until desired viscosity is reached.
Add the sliced vegetables, pineapple, garlic and oil to a frying pan and sauté over medium heat. Once the cauliflower and sauce are fully cooked and desired viscosity of the sauce is achieved, combine the cauliflower and sauce in the pan also and mix well. Serve over rice.
