High Protein Street Corn Queso
Anytime I can enjoy a Mexican meal with high protein, sign me up!
Ingredients
1 Brick of Cream Cheese
1 Can of Corn Kernels
1.5 Cups Havarti Cheese
1.5 Cups of Cottage Cheese
1/2 Cup Sour Cream
1/3 Cup Milk
2-3 Tsp. Tajin Seasoning
2-3 Tsp. Evoolution Chipotle Oil
Directions
Add the chili oil to a small pan over medium heat and dump in the corn. Add 1/2 of the Tajin seasoning and pan fry up until some kernels begin to brown.
Remove from heat and set aside.
In a medium pot add the cream cheese and havarti cheese. to a tsp or two more of the chipotle oil. Heat until melted. After melted add in all remaining ingredients and mix well. If you want to blend the cottage cheese before hand you can do that too then add it. Combine well.
Serve warm with tortilla chips and some pickled jalapenos if you desire!
