Stout Braised Pork Tacos
Okay so these are IRISH Tacos and aside from the Stout Pork what else makes them Irish typically is a pea crema. I do not like peas all the much …. I certainly don’t like them enough to make them into a crema so i went with a classic of ours .. Jalapeno. Still green, a little more spice but a little less Irish.
Serving Size: 4-6 Small Tacos
Tomato Stout Sauce Ingredients
1 Cup of Boiling Oar Stout
1/2 Can Italian Plum Tomatoes, drained
3 Tbsp. JamDinners Italian Seasoning
2 Tbsp Tomato Paste
3 Cloves of Garlic, minced
Salt to taste
Pinch of Sugar
Crema Ingredients
1 Cup of Greek Yogurt
1 Large Jalapeno, sliced (or 1/2 Cup Peas)
1 Tsp Salt
1 Tsp. Pepper
1 Tsp. Garlic Powder
1 Tsp. Olive Oil
Taco Ingredients
4-6 Small Tortillas
2 Pork Chops or a small Pork Roast
1 Cup of Tomato Stout Sauce
1 Cup of Green Cabbage, shredded
1 Cup of Red Cabbage, shredded
1/2 Cup Crema
1/2 Cup Pickled Red Onions
2-3 Tsp. JamDinners Pork Seasoning
Tomato Sauce Directions
Combine all ingredients in a small pot cook over medium heat, bring to a slight boil to get the alcohol off, stir frequently and then allow to simmer for 10-15 minutes at least. Remove from heat and set aside to cool. You can even make this the day before or earlier in the day.
Crema Directions
Combine all ingredients together and using an immersion hand blender, combine well. Add additional salt, pepper or garlic powder to taste. Store in the fridge for at least 1 hour or until ready to use.
Taco Directions
Pat dry the pork with paper towel, season with JamDinners Pork seasoning. Place in a small crock pot with 1-1.5 cups of the Tomato Stout Sauce. Cover and cook on high for at least two hours (checking frequently) or until the internal temperature is at least 165F degrees.
Once the meat has fully cooked, remove from the crock pot, shred using two forks then return the shredded pork to the crock pot to absorb some more of the sauce and allow to sit there on’warm’. Once you are ready with your other ingredients, you can start to build your tacos. Start with the tortilla, layer it with the shredded pork then the 2 different color cabbages and the pickled red onions. Lastly, drizzle with the green crema and away you go!
MAKE IT EASY - Just season the pork with salt & pepper before putting in the crock pot if you don’t have access to our Pork Seasoning
MAKE IT EXTRA - Make the tomato sauce right in the crock pot and cook on low for 5-6 hours really letting all the ingredients come together. Oh and also … make the Green Pea Crema instead!
