St. P's Sammies

My absolute FAVORITE Bakery in #yyc is ‘Pretty Sweet YYC’. Hands down the best desserts and they are so creative. They make anything from delicious cakes to donuts to macarons and sammies! These sammies are no where near close to as eye catching as theirs but they are pretty darn good! They are a great treat for the family to celebrate St. Patrick’s Day!

Serving Size: 12-16 Sammies

Ingredients

  • 2 Cup Flour

  • 1 Cup Peppermint Chocolate Chips (Green & White)

  • 2/3 Cup Butter

  • 1/2 Cup Sugar

  • 1/4 Cup Brown Sugar

  • 1 Large Egg

  • 2 Tsp. Vanilla Extract

  • 1/2 Tsp. Baking Soda

  • 1/2 Tsp. Salt

  • Green Food Coloring

Icing Ingredients

  • 1/2 Cup Butter/Margarine

  • 2.5 Cups Icing Sugar

  • 1 Tbsp. Almond Milk

  • 1 Tsp. Peppermint Extract

  • 1 Tsp. Vanilla Extract

  • 4-6 Drops Green Food Coloring

Directions

  • Pre-heat over to 350F degrees. Soften butter in a large bowl then add in both sugars and using a hand mixer, combine. Add in vanilla and the egg until JUST mixed.

  • Add in the flour, salt and baking soda. Mix well but don’t over mix. Split the mixture into 2 different bowls if you want to have green and regular colored cookies. Add in 4-8 drops of food coloring and mix with a spoon or fork. Add more coloring if needed.

  • Add in the chocolate chips. and stir lightly with a spoon or your hands.

  • Roll dough into 1-2 inch balls and lay on an ungreased baking sheet. Bake for 10-12 minutes or until the bottoms just begin to brown. Remove from oven, allow to cool fully.

  • While the cookies are cooling. Prepare the icing, in a medium bowl beat the butter until it is light and fluffy. Slowly add the icing sugar and beat well. Add in the almond milk then both the vanilla and peppermint extracts. Finally add the food coloring and mix well. Allow it to sit in the fridge for minimally 1 hour.

  • Once cooled, turn 1/2 of cookies upside down and ice using a piping bag. Place the other 1/2 of the cookies on top and gently push down., but do not press too hard. Freeze the cookies for minimally 1 hour then serve!
