Chicken Stuffed Peppers

Stuffed Peppers are a great way to switch up your chicken/rice dinner. You can get a little creative and increase your vegetable intake. It is a win win. These stuffed peppers are crazy delicious. Serving Size: 2 or 4 ‘Meal Plan’ dishes

Ingredients

  • 1 Lb. Ground Chicken

  • 2 Red Peppers, cut into 1/2

  • 1-2 Cups White Rice or Quinoa, cooked

  • 1/2 Red Onion, Sliced

  • 8-10 Mushrooms, sliced

  • 3 Cloves Garlic, minced

  • 3 Tbsp. Soy Sauce

  • 1-2 Tsp. Red Chili Flakes

  • 1 Tsp. Sriracha

  • Salt & Pepper to taste

  • Green Onion, chopped (Optional)

  • Parmesan Cheese, shredded (Optional)

Directions

  • Pre-heat oven to 375F degrees. In a medium bowl, combine all ingredients except the peppers, rice and green onion. Mix well.

  • Heat oil in a pan oven medium heat. Add the chicken mixture and cook until almost fully cooked. Remove pan from heat. Add rice to mixture and combine well.

  • Stuff this mixture evenly into the red pepper halves, place on a baking sheet and put into the oven. Bake for 25-30 minutes or until chicken is fully cooked.

  • Sprinkle green onion or cheese on top with 5-7 minutes left in baking.

  • Remove from oven and enjoy!
