Spicy Sweet Potato Bowl
The Mr. isn’t fond of meatless meals, unless it is our Bruschetta Pizza or Portobello Burgs so I get to be creative with these recipes when he is not around and I love some of the creations! This spicy sweet potato bowl is jam packed with flavor and protein and is very filling.
Ingredients
1/2 Large Sweet Potatoes, cut into 1 inch pieces
1 Cup Quinoa, cooked
1 Cup Shredded Lettuce
1/2 Cup Corn, cooked
1/2 Cup Sweet Chili Mayo (1/4 Cup Mayo + 3 Tbsp. Sweet Chili Sauce mixed together)
1/2 Cup Black Beans
1/2 Red Pepper, sliced
1/4 Red Onion, sliced
1-2 Tsp. Salt
1-2 Tsp. Pepper
1-2 Tsp. Garlic Powder
1-2 Tsp. Cayenne Pepper
1 Tsp. Chili Flakes
1 Lime, sliced

Directions
Pre-heat oven to 400F degrees. Spray a pan cooking spray then lay out the sweet potato pieces. Spray the tops of the sweet potato pieces with a little more cooking spray then season with salt, pepper, garlic powder, cayenne pepper & chili flakes.
Bake for 35-45 minutes or until they crisp up. Flip the sweet potatoes 1/2 way through and lightly season again then return to the oven and continue cooking.
Grill the red pepper slices and red onion slices in a pan on the stove top with a little salt and pepper, then set aside.
While the sweet potatoes finish cooking, prepare all the other ingredients in a bowl. Top with the sweet potatoes then drizzle the sweet chili mayo over top.
