Greek Quesadillas

Yes you read that right … Greek Quesadillas. What a genius idea and I am sure I am not the first person to come up with this but damn is it good and super simple. We even made them using the new trend of cutting 1/2 way through the tortilla and folding each section over. It worked so well.

Serving Size: 2 people (4 Quesadillas)

Ingredients

  • 4 Large While Tortillas

  • 2 Chicken Breast, shredded

  • 2 Cup Romaine lettuce, cleaned and ripped

  • 1 Cup Feta Cheese

  • 2 Roma Tomatoes, chopped

  • 1/2 Green Pepper, chopped

  • 1/2 Cucumber, sliced into quarters

  • 3/4 Cup Kalamata Olives, chopped

  • 4 Tsp. Garlic Hummus

  • 2 Tsp. Greek Salad Dressing

  • 2 Tsp. Oregano

  • 2 Tsp. Salt

  • 2 Tsp. Pepper

  • 2 Tsp. Garlic Powder

  • Cooking Spray

Directions

  • Spray a pan with cooking spray and turn to medium heat. Season both sides of the chicken breasts with garlic powder, salt, pepper and oregano then add to the pan. Cook the chicken, flipping half way through until and internal temperature of at least 165F has been reached, approximately 25 minutes. You can also cook on the BBQ if you would like.

  • Remove the chicken from the heat and set aside to cool. Once the chicken has cooled enough to handle, using 2 forks begin to shred the chicken. Add in the greek salad dressing and mix around.

  • Lay out the tortillas on the counter and make a slit from the bottom of the tortilla to the center of each tortilla.

  • In a medium bowl, combine the peppers, tomatoes, olives and cucumbers together with a little salt and pepper. Mix well.

  • Now to begin to add toppings to the tortillas, ensure you evenly separate everything out into 4. You will dress the tortilla going clockwise starting on the bottom left. Start with the chicken breast.

  • Then top left is the lettuce, top right is the cucumber/tomato/olive mix. Lastly spread a thin layer of hummus in the bottom right corner and sprinkle the feta cheese on top.

  • Begin folding over each quarter starting with the chicken and working your way up until you get to the lettuce.

  • Then in a pan over medium heat, gentle brown the outside, about 3-5 minutes per side and serve!
