Spicy Salmon Quinoa Bowl

I hardly get to have Salmon in the house … the Mr. has a serious phobia of the little bones in them and he never fails to find at least 3 little ones in ANY salmon he eats. I can find none in my piece but he always finds a couple. I think he is just hyper sensitive to the texture … I never have any issues. Every 9-12 months I convince him we should try salmon again, I cook it, fall in love and he basically plays with his food like a child LOL. So now I buy Salmon to eat for lunches alone so I can get creative and enjoy. This spicy salmon quinoa bowl is delicious and actually a super easy/healthy lunch dish!

Ingredients

  • 1 Large or 2 Small Salmon Fillets

  • 1 Cup Cooked Quinoa

  • 1/2 Avocado, sliced

  • 1/4 Cucumber, sliced

  • 1/4 Cup Shredded Carrots

  • 1/4 Cup Red Onion, sliced

  • 1/4 Cup Sweet Chili Sauce

  • 2 Tbsp. Soy Sauce

  • 2 Tbsp. Sesame Oil

  • 2 Tbsp. Sriracha

  • 1 Tsp. Garlic Powder

  • 1 Tsp. Pepper

  • 1 Tsp. Rice Vinegar

  • 1/2 Tsp. Salt

  • 2 Tbsp. Green Onion, chopped for garnish

  • 1 Tbsp. Sesame Seeds, for garnish

Directions

  • Pre-heat the oven to 325F degrees. In a medium bowl combine the spices, sauces and whisk together. Pour 1/2-3/4 into a dish with the salmon to marinade for 15 minutes. Set in the fridge for the 15 minutes.

  • Chop/prep all veggies and the rest of the quinoa bowl.

  • Once 15 minutes has passed,line a baking sheet with tin foil and lay the salmon on top. Cook for 20 minutes or until the internal temperature has reached 135F degrees.

  • Remove from oven, place on the bowl of quinoa, drizzle remaining sauce over top then garnish with sesame seeds and green onion. Add sriracha mayo to the final product for additional creamy heat if desired.
