Spicy Island Tacos

Holy eff …. I never thought I could love tacos anymore then I already did but alas … I do! These super easy tacos are a great spin on a classic and we are here for it.

Tomato Sauce Ingredients

  • 1/2 Can Italian Plum Tomatoes, drained

  • 3 Tbsp. JamDinners Italian Seasoning

  • 2 Tbsp Tomato Paste

  • 3 Cloves of Garlic, minced

  • Salt to taste

  • Pinch of Sugar

Taco Ingredients

  • 2 Pork Chops or a small Pork Roast

  • 1 Cup of Tomato Sauce

  • 4 Small Tortillas

  • 1 Cup shredded Green Cabbage

  • 1 Cup shredded Purple Cabbage

  • 3/4 Cup Pineapple Chunks

  • 1/2 Cup Red Onions, sliced (we sometimes like to use pickled onion)

  • 1/4 Cup Green Onion, sliced (optional)

  • 3-4 Tbsp. Soy Sauce

  • 2-3 Tsp. EVOOlution Alaea Hawaiian Sea Salt

  • Sriracha for drizzle

Tomato Sauce Directions

  • Combine all ingredients in a small pot cook over medium heat, stir frequently and then allow to simmer for 10-15 minutes at least. Remove from heat and set aside to cool. You can even make this the day before or earlier in the day.

Taco Directions

  • Pat dry the pork with paper towel, season with the EVOO sea salt. Place in a small crock pot with the soy sauce and 1 cup of the Tomato Sauce. Cover and cook on high for at least two hours (checking frequently) or until the internal temperature is at least 165F degrees.

  • When the pork has finished cooking, remove from the crock pot and shred it using two forks. Return the meat to the crock pot with the sauces and allow to sit there on warm.

  • Cut up any remaining vegetables then you can start assembling the tacos. Scoop some taco meat with juices into the tortillas, top with the cabbages, onion and pineapple. Drizzle with sriracha if desired. You could even drizzle with extra sauce from the crock pot!

  • It may look like a simple recipe but the flavors all together are amazing!


MAKE IT EASY - Buy a pack of coleslaw and use that to top the tacos (without the dressing). Also if you don’t have access to the Alaea sea salt, regular sea salt would work too.

MAKE IT EXTRA - You could grill the pineapples for some additional flavors and color.
