Quinoa Burrito Bowl
Any excuse to get creative with Mexican inspired meals is a win for me … and this is a great way to make it a little healthier!
Prep Time: 15-20 minutes
Serving Size: 2 Bowls
Ingredients
3-4 Cups Shredded Lettuce
1.5 Cups Quinoa, cooked
1 Avocado, mushed up
1 Cup Pico de Gallo
1 Cup Cheddar Cheese, shredded (optional)
1 Cup Black Beans
1 Cup Corn
1 Jalapeno, sliced
Limes for garnish
Valentina’s Hot Sauce *Optional
Directions
Split all ingredients evenly between 2 bowls, season with salt and pepper if desired and enjoy!
