Quinoa Burrito Bowl

Any excuse to get creative with Mexican inspired meals is a win for me … and this is a great way to make it a little healthier!

Prep Time: 15-20 minutes

Serving Size: 2 Bowls

Ingredients

  • 3-4 Cups Shredded Lettuce

  • 1.5 Cups Quinoa, cooked

  • 1 Avocado, mushed up

  • 1 Cup Pico de Gallo

  • 1 Cup Cheddar Cheese, shredded (optional)

  • 1 Cup Black Beans

  • 1 Cup Corn

  • 1 Jalapeno, sliced

  • Limes for garnish

  • Valentina’s Hot Sauce *Optional

Directions

  • Split all ingredients evenly between 2 bowls, season with salt and pepper if desired and enjoy!
