Seafood Stuffed Potatoes
My dad’s list of favorite foods always has seafood at the top of it. He grew up on the east coast in Nova Scotia so seafood is LIFE out there! For us growing up as kids he only ever really got seafood on special occasions like birthdays because being in Alberta, seafood is crazy expensive! It sort of became a tradition. As I grew older and developed a passion for cooking it was the perfect opportunity to take dad’s birthdays to the NEXT LEVEL! We have done amazing racks of ribs with homemade dry rubs, seafood platters, hearty steaks and this year we decided to take our ‘side dish’ game up a couple of notches! These combine your favorites from a twice baked potato and seafood medley but we finish them off on the barbecue and they are drool worthy. Absolutely worth a try!

Ingredients
3 Small to Medium Russet Potatoes
1 Cup Parmesan Cheese
1 Cup Mozzarella Cheese, shredded
1/2 Cup Jumbo Shrimp, chopped into decent sized chunks
1/2 Cup Fresh Scallops, chopped into decent sized chunks
1/2 Cup Crab Meat (or Imitation Crab meat), chopped into decent sized chunks
1/2 Cup Green Onion
3-4 Tbsp. Sour Cream
2-3 Tbsp. Margarine
1-2 Tsp. Garlic Powder
Salt & Pepper to taste
Directions
Wash the russet potatoes then using a fork, stab the sides multiple times. Microwave the potatoes for about 10-12 minutes or until they have softened.
Remove potatoes from the microwave (carefully as they are BURNING HOT) and place on a cutting board.
Using a sharp knife, lay the potato flat and take off the top 1/3 of the potato (length wise). Carefully scoop out the potatoes using a a small spoon, scraping along the edges of the potato as best you can to get all the filling without wrecking the skin of the potatoes.
Scoop the potato into a bowl. Add in 1 tbsp of margarine and 3 tbsp of sour cream. Mix well.
Add in the mozza cheese and 1/2 the Parmesan cheese as well as the garlic powder, salt, pepper and then green onions, mix well again and set aside.
Heat 1 tbsp. of margarine in a medium pan on the stove. Once melted, add in the 3 types of fish (if using imitation crab meat, only add in the shrimp and scallops to start then add the imitation meat in closer to the end just to warm). Sprinkle with salt and pepper and cook 5-6 minutes or until fish is fully cooked.
Remove pan from heat and scoop the contents of the pan into the bowl with the potato ingredients. Combine well.
Using a spoon, scoop the insides of the potatoes back into the potatoes. They will be overflowing but that’s okay. Make sure you pack down to fit all the yummy goodness in!
Heat the BBQ to 400F and set the potatoes on a tin foil sheet on the top rack. Allow to cook for 20-30 minutes or until the top of the potatoes begin to turn golden brown. Top each potato with the remaining Parmesan cheese and cook 5-6 minutes longer until the cheese is melted then broil using a torch.
