Braised Beef Tacos
Tacos are already an insanely easy dish but these braised beef tacos are drool worthy and even the ‘non-taco lover’ in your house will enjoy them! They are a perfect balance of Mexican with traditional flavors. We even pickled our own red onions … which is also insanely easy!
Serving Size: 6 Small Tacos
Ingredients
1 Small Beef Roast
6 Small Soft Tortilla Shells
1/2-1 Cup Pickled Red Onion
1/2 Cup Red Onion. chopped
2 Roma Tomatoes, chopped
Chives, chopped
1 Can Crushed Tomatoes
1/2 Cup Vegetable Broth
1/3 Cup Orange Juice
1-2 Tbsp. Olive Oil
1 Tsp. Cayenne Powder
1 Tsp. Paprika
1 Tsp. Oregano
1 Tsp. Garlic Powder
1 Tsp. Pepper
1 Tsp. Salt
1 Tsp. All Spice
1 Tsp. Lime Juice
4 Cloves Garlic, crushed
2 Cloves Garlic, minced
Jalapeno Slices
Feta Cheese, optional
Lime Wedge for garnish
Directions
Combine all of the spices together in a bowl and coat all sides of the roast well. Pressing in so the spices stick. Sear in a medium pan on medium/high heat to lock in the flavors. Sear all sides. Add the minced garlic and chopped onions to the pan and cook slightly while roast sears.
Place the roast into a crock pot and top with crushed tomatoes, orange juice, lime juice, crushed garlic, vegetable broth and olive oil. Sprinkle with additional salt and pepper if desired.
Allow to cook on low for 6-8 hours or until fully cooked and easy to pull apart.
Using 2 forks or claws, shred the meat and allow to sit in the flavors in the crock pot on low for another 1-2 hours or until ready to serve.
Serve on warm tortillas with chopped romas, jalapenos, pickled onions and feta cheese if desired. Squeeze fresh lime over top and enjoy!
