Sausage & Potato Casserole

Sometimes you just want to whip together a quick meal on cold nights and then cozy up on the couch, that is exactly what this meal is here for. It is by far one of our easiest casserole meals to make.

Ingredients

  • 3 Tuscan Sausages (or any sausage of choice)

  • 3 Russet Potatoes, peeled and cut into 2 inch pieces

  • 1 Cup of Shredded Cheese (Mozza and Cheddar mix)

  • 1/2 White Onion, chopped

  • 1-2 Tsp. Garlic. Powder

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

  • 1-2 Tsp. Parlsey Flakes

Directions

  • Pre-heat oven to 350F degrees. In a large pot. bring the the potatoes to a boil and cook until soft. Drain and set aside.

  • While the potatoes are cooking, cook the sausages over medium heat on the stove. Cook until the internal temperature has reached 165F degrees, flipping the sausages part way through.

  • Half way through the sausages cooking, add the chopped onions to the same pan and sauté them while the sausages are cooking. Once the sausage has finished cooking, remove from the heat and cut into pieces.

  • In a lightly greased casserole dish add the potatoes first and season with salt, pepper & garlic powder. Add in the sausage, onions and about 1/2-3/4 of the cheese.

  • Add the remaining cheese to the top and place in the oven. Bake about 10-15 minutes then broil on LO for another 10 minutes to crisp up the top. Serve with sour cream and/or hot sauce!

MAKE IT EASY - Pre-cut the sausage and potatoes before cooking and just add lots of butter , the onions and the seasonings to the casserole dish and cook for about 30-40 minutes (or until sausage and potatoes are fully cooked) then go to the cheese step!

MAKE IT EXTRA - Use a fancier cheese like smoked cheddar to replace the mozza cheddar mix.

MAKE IT VEGETARIAN - Use the Bangers from ‘The Very Good Butcher’ instead of the tuscan sausage.
