Rose Tomato Mushroom Sausage Pasta

Colder weather calls for hearty warm dinners like this crazy easy pasta!

Serving Size: 4 Bowls

Ingredients

  • 1 Jar of Stefano’s Rosee Sauce

  • 4 Chicken Bacon Ranch Sausages from Lee’s Gourmet

  • 3 Cups Dry Penne Pasta, cooked as per packaging

  • 2-3 Cups Mushrooms, sliced

  • 1 Cup White Onion, chopped

  • 4-5 Cloves of Garlic, minced

  • 1 Cup Cherry Tomatoes, halved

  • 1/4 Cup Parmesan Cheese, grated

  • 1/4 Cup Parsley, chopped

  • 3-4 Tbsp. Olive Oil of choice

  • Salt & Pepper to taste

Directions

  • Cook the sausage in a medium pan with a little water covered about 15 minutes, flipping half way through. Remove from the pan, slice into bite sized pieces and return to the hot pan to sear. Once seared as desired, remove again and set aside.

  • Begin cooking the pasta.

  • Add olive oil to the pan, add in the mushrooms and onions then season with salt & pepper as desired. Cook about 5-7 minutes. Add in the tomatoes and cook 2-3 minutes.

  • Add in the garlic and cook until fragrant, about 1 minute then add the sausage back in and add in the whole jar of sauce. Mix well. Season with additional salt & pepper as desired.

  • Drain cooked pasta and add to the pan mix well. Serve with fresh parsley and parmesan cheese on top.
