Roasted Tomato Balsamic Hummus Toast

Nothing like a simple snack for New Years .. staying in. This Hummus Toast is perfect and incredibly easy to make. The collection of flavors is awesome. I am a fan of roasted tomatoes but I don’t often use them in many dishes. I find roasting tomatoes and vegetables for soups though is another great use for them! Just sayin. Okay … now back to the toast!

Ingredients

  • 6-8 Slices of Baguette

  • 6-8 Tbsp. Garlic Hummus

  • 1 Cup Cherry Tomatoes, halved or quartered

  • 2-3 Tbsp. Balsamic Vinegar

  • 1-2 Tsp. Garlic Powder

  • 1-2 Tsp. Margarine

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

Directions

  • Pre-heat oven to 350F degrees. Cut the tomatoes and lay in a small baking sheet. Combine the balsamic vinegar, oil, garlic powder, salt and pepper. Drizzle over the tomatoes and bake for about 20 minutes.

  • Lightly butter the top of the baguette slices and add to the oven around 5-6 minutes left in tomorrow baking.

  • Remove the bread from the oven and generously spread the hummus overtop of the bread then lay out the tomatoes evenly on top. Drizzle a little more balsamic vinegar mix overtop (from the bottom of the tomato dish). Season with additional pepper. Enjoy!
