Portobello Fajitas
What a simple and healthy meal! In my opinion it is a perfect combination of EASY comfort food and a filling #meatlessmonday dinner!
Fajita Ingredients
2 Large Portobellos, sliced
1 Large Green Pepper, sliced
1 Large Red Pepper, sliced
1/2-3/4 Red Onion, sliced
1-3 Tsp. Taco Seasoning
1-2 Tsp. Lime Juice
1-2 Tsp. Soy Sauce
1-2 Tsp. Olive Oil
1-2 Tsp. Garlic Powder
1-2 Tsp. Salt
1-2 Tsp. Pepper
Cooking Spray
Additional Ingredients (Optional)
4 Large Tortillas
1/2 Cup Sour Cream
1/2 Cup Salsa
1/2 Cup Shredded Cheese
2-3 Tsp. Valentina’s Hot Sauce
Directions
Slice the portobellos and marinate in the fridge for at least an hour with the taco seasoning, lime juice, soy sauce and olive oil.
Once you are ready to cook the fajitas, pre-heat the oven to 350F degrees. Spray a large baking sheet with cooking spray then scatter the sliced peppers on the pan, season with salt, pepper and garlic powder.
Cook for 10-12 minutes in the oven. Remove the pan from the oven, add the sliced onions and the sliced portobellos. Return to the oven and cook an additional 20-30 minutes depending on your oven.
Once mushrooms and onions are fully cooked, remove the entire pan from the oven, dress your tortillas with desired toppings and enjoy!
MAKE IT EASY - Use frozen sliced peppers
MAKE IT EXTRA - Marinate the mushrooms overnight for additional flavors and add additional veggies to the pan and/or the fajita before serving.
