Portobello Fajitas

What a simple and healthy meal! In my opinion it is a perfect combination of EASY comfort food and a filling #meatlessmonday dinner!

Fajita Ingredients

  • 2 Large Portobellos, sliced

  • 1 Large Green Pepper, sliced

  • 1 Large Red Pepper, sliced

  • 1/2-3/4 Red Onion, sliced

  • 1-3 Tsp. Taco Seasoning

  • 1-2 Tsp. Lime Juice

  • 1-2 Tsp. Soy Sauce

  • 1-2 Tsp. Olive Oil

  • 1-2 Tsp. Garlic Powder

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

  • Cooking Spray

Additional Ingredients (Optional)

  • 4 Large Tortillas

  • 1/2 Cup Sour Cream

  • 1/2 Cup Salsa

  • 1/2 Cup Shredded Cheese

  • 2-3 Tsp. Valentina’s Hot Sauce

Directions

  • Slice the portobellos and marinate in the fridge for at least an hour with the taco seasoning, lime juice, soy sauce and olive oil.

  • Once you are ready to cook the fajitas, pre-heat the oven to 350F degrees. Spray a large baking sheet with cooking spray then scatter the sliced peppers on the pan, season with salt, pepper and garlic powder.

  • Cook for 10-12 minutes in the oven. Remove the pan from the oven, add the sliced onions and the sliced portobellos. Return to the oven and cook an additional 20-30 minutes depending on your oven.

  • Once mushrooms and onions are fully cooked, remove the entire pan from the oven, dress your tortillas with desired toppings and enjoy!


MAKE IT EASY - Use frozen sliced peppers

MAKE IT EXTRA - Marinate the mushrooms overnight for additional flavors and add additional veggies to the pan and/or the fajita before serving.
