Homemade Pico de Gallo

I am on a Mexican kick because cinco de mayo is just around the corner… on top of guacamole another great option to pair with tortilla chips is Pico de Gallo. I also use my homemade Pico de Gallo on top of chicken then bake it in the oven and top with cheese (yum!) or mix in corn and beans and make a Mexican salad. It is super easy to make, is so refreshing and a great side dish for any Mexican meal!

Ingredients:

  • 2-3 Large Hot House Tomatoes, chopped

  • 1/2 White Onion, chopped (or Red - it doesn’t really matter)

  • 1 Small Jalapeno, chopped

  • 1-2 Tsp. Lemon Juice

  • Salt to taste

Ingredients:

  • Combine all ingredients in a bowl and mix well. Let cool in fridge for 1-2 hours for best taste.
