JAM's Peri Peri Chicken

Craving Nando’s Peri Peri Chicken but stuck in quarantine and can’t leave the house? OR Nando’s is no where near Your house so you can’t really quickly grab some on the way home or order it in to your house anyways. Have no fear …. this recipe can satisfy those cravings and is incredibly easy to make. We also know you can buy Peri Peri sauce at the grocery store … and by all means take the easy road and grab that to slather on instead, you do you! Our Peri Peri sauce is a little different but it has the right amount of creamyness and kick.

Ingredients

  • 4 Large Chicken Thighs

  • 1 Cup Thai Sweet Chili Sauce

  • 1/4 Cup Lime Juice

  • 2 Tbsp. Garlic Powder

  • 2 Tbsp. Soy Sauce

  • 1 Tbsp. Worcestershire Sauce

  • 1-2 Tsp. Pepper

  • 1-2 Tsp. Seasoning Salt

Directions

  • Heat your BBQ up to about 400F-500F degrees. While the BBQ is heating up. sprinkle the pepper and seasoning salt evenly on both sides of all chicken thighs.

  • Lay the chicken thighs on the BBQ and cook thoroughly until internal temperature is 165F degrees or better.

  • Combine all other ingredients in a small sauce pan and warm on a side burner or on the stove and keep warm on low to medium heat until ready to use.

  • Once the chicken is almost fully cooked, brush the under sides of the thighs with the sauce. Allow to cook about 1-2 minutes then flip the thighs and brush the tops with the sauce. Allow to continue cooking about 3-6 minutes.

  • Serve on a bed of rice & corn or with coleslaw … OR BOTH. YUM!
