Christmas Cookie Exchange Option 1 & 2: Peppermint Chocolate Chip Cookie

A friend of mine reached out and asked if I was going to be sharing some of my favorite cookie recipes because she had a cookie exchange fast approaching and wanted some great cookie ideas. I wasn’t originally going to share a bunch as I was saving my recipes for my ‘12 Days of Recipes’ coming up ahead of Christmas but I cant disappoint a friend so I quickly got to work!

Our first recipe suggestion for a cookie exchange is our Peppermint Chocolate Chip Cookies - I have made them with 2 different options: with green food coloring and without.

Ingredients

  • 1.5 Cups Flour

  • 3/4 Cup Christmas White Chocolate Chips

  • 1/2 Cup White Sugar

  • 1/4 Cup Brown Sugar

  • 8 Tbsp. Margarine

  • 1 Egg

  • 1 Tsp. Vanilla

  • 1/2 Tsp. Mint Extract

  • 1/2 Tsp. Baking Soda

  • 1/4 Tsp. Salt

  • 8 Drops Green Food Coloring (Optional)

Directions

  • Preheat oven to 350F degrees. Combine margarine with both sugars in a large bowl and mix well using a hand mixer. Add vanilla and the egg and mix well.

  • Add the flour, baking soda and salt, mix until it starts to crumble. If you are going to make the cookies green, you would also add the food coloring now. Once mixed, add in the chocolate chips and mix using your hands only.

  • Using your hands, form small balls of dough, about 1-2 inches in size and place on a large cookie sheet. Bake for 10-12 minutes, remove from the oven and cool.
