Peach Blueberry Summer Salad

Okayyyyyyy if you are still looking for your go-to summer salad … look no further! This baby is damn near perfection! It is super easy to make, is very filling but also a really perfect light summer dinner.

Serving Size: 2 Large Salads

Dressing Ingredients

  • 1/3 Cup or 75ml of Olive Oil

  • 3.5-4 Tsp. EVOO Peach White Balsamic Vinegar

  • 2.5 Tsp. Dijon Mustard

  • 1 Tsp. Salt

  • 1 Tsp. Garlic Powder

  • 1 Tsp. Pepper

Salad Ingredients

  • 4-5 Cups of Spring Mix

  • 2 Chicken Breast

  • 3 Peaches, sliced

  • 1/4 Red Onion, sliced

  • 3/4 Cup Fresh Blueberries

  • 1/2 Cup Chopped Walnuts

  • 1/2 Cup Feta or Goat Cheese, crumbled

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

  • 1 Tsp. Garlic Powder

Directions

  • Combine all dressing ingredients together in a measuring cup, mix well and leave in the fridge until needed.

  • Season the chicken with salt, pepper and garlic powder. Heat up BBQ to desired heat, spray the BBQ and add the chicken breast. Cook, flipping 1/2 way through until internal temperature has reached 165F degrees. Remove chicken from the BBQ and set aside to cool.

  • While the BBQ is still on, take the peaches halves/slices and grill them slightly. About 2-3 minutes per side (just enough to develop some grill marks) and flip the repeat. Remove from the BBQ and set aside to cool.

  • While your chicken and peaches are cooling, combine all other remaining salad ingredients in 2 bowls equally divided. Sliced your chicken then add your chicken, peaches and dressing, mix and serve!
