Parmesan Crusted Haddock
I have been trying a lot more lately to get the Mr away from RED MEATS and into more lean meats chicken/turkey etc and more fish. I haven’t been feeling great with the red meat meals we have been eating so I needed a change. To convince him that the ‘leaner’ meats or fish meals are the way to go I have to ensure they speak to him. This Parmesan crusted Haddock does exactly that and it is incredibly simple to make.
Ingredients
2 Large Haddock Filets
1/2 Cup Parmesan Cheese
1/2 Cup Flour
1-2 Tsp. Parsley Flakes
1 Tsp. Garlic Powder
1 Tsp. Pepper
1 Tsp. Paprika
1/2 Tsp. Salt
Directions
Preheat oven to 375F degrees. Line a baking sheet with tin foil and spray with cooking spray.
On a large plate or in a large bowl, combine the spices and flour. Mix well.
Pat dry with paper towel each fillet then dip each fillet into the flour mixture. Ensure all sides are generously coated. Lay on the baking sheet. Generously top with parmesan cheese.
Sprinkle with additional parsley as well. Bake for 25-30 minutes or until fish is fully cooked. Broil on LO for 5-10 minutes to create a gold brown crust.
Serve with broccoli, rice and a lemon wedge or just anything else that your little heart desires!
