One Pan Mushroom Spinach Vegetarian Pasta

I unknowingly slipped into a mushroom/spinach phase. Quesadillas and numerous pastas lol but who can blame me. Both of those ingredients are amazing. This one pan pasta is so tasty. It is technically 2 dishes though because I did need a pot to cook the pasta. Shhhhhh though!

Ingredients

  • 2-3 Cups Bow Tie Pasta, cooked al dente

  • 2 Cups Mushrooms, thickly sliced

  • 1 Cup Spinach

  • 1 Cup Parmesan Cheese

  • 1/2 Cup Vegetable Broth

  • 2 Tbsp. Margarine

  • 2 Tsp. Salt

  • 2 Tsp. Garlic Powder

  • 2 Tsp. Pepper

  • 1-2 Tsp. Red Pepper Flakes

  • 1-2 Tsp. Italian Seasoning

Directions

  • Once pasta is fully cooked, drain and set aside.7

  • In a large pan heat margarine over medium heat, add the mushrooms and a little salt & pepper. Saute about 5-8 minutes or until browning.

  • Add in garlic and mix. Add in the vegetable broth and cook over medium heat until reduced. Reduce the heat and cook another couple minutes.

  • Remove the mushrooms and set aside on a plate. In the same pan, add in the spinach and a little salt/pepper. Cook until fully wilted.

  • Add the mushrooms back in as well as the drained pasta. Mix well. Add in the parmesan cheese , Italian seasoning and red pepper. Mix well again. Add more seasonings as desired. Voila.
