One Pan Harvest Chicken

Fall is all about comfort food and easy to make meals - and this Harvest Chicken perfectly captures both of those things and it literally has all the fall vibes! I love being able to throw all the ingredients into 1 dish especially to reduce the amount of dishes!

Ingredients

  • 2 Chicken Breast, cut into 1 inch cubes

  • 1 Large Beet, cut into 1inch cubes

  • 6-8 Mini Yellow Potatoes, cut into halves or quarters depending on size

  • 6-8 Brussel Sprouts, cut into halves or quarters depending on size

  • 2-3 Tbsp. Turkey Dry Rub Seasoning

  • 2-3 Tbsp. Margarine

  • 1-2 Tsp. Pepper

  • 1 Tsp. Salt

  • 1 Tsp. Garlic Powder

Directions

  • Melt the margarine in a large pan over medium heat. Season the chicken breast with salt, pepper and garlic powder then add the chicken to the pan. Cook the chicken fully through, about 15-20 minutes, flipping the chicken pieces periodically.

  • Once the chicken is fully cooked, remove from the pan and set aside. Add a little more margarine or vegetable oil then add the cut veggies and the majority of the turkey rub seasoning. Cover the pot with a lid and allow the veggies to cook through.

  • Cook about 20-25 minutes, tossing the veggies every 5/6 minutes to ensure an even cook on all sides. Once the veggies are almost fully cooked through, add the chicken back into the pan, toss around add additional seasoning and voila.
