Mexi Veggie Burger
Veggie burgers may not be our favorite burgers but when you get creative like this, they turn out pretty darn good! We always try to incorporate different proteins during burger week.

Cook Time: 60-80 minutes
Serving Size: 2 Burgers
Burger Patty Ingredients
1/2 White Onion, diced & sauted
1 Can Brown Lentils
2 Carrots, finely grated
3/4 Cup Flour (or Almond Flour)
2 Cloves Garlic, minced
1-2 Tbsp. Ketchup
1-2 Tbsp. Soy Sauce
2-3 Tsp. JamDinners Taco Seasoning
1-2 Tbsp Olive Oil
Creamy Salsa Verde Sauce Ingredients
3 Tomatillos, husked
1-2 Jalapenos, halved
1/2 Red Pepper, halved
1 Ripe Avocado
2-3 Cloves of Garlic, lightly crushed
1 Tsp. JamDinners Taco Seasoning
Additional Salt & Pepper to taste
1-2 Tbsp. Jalapeno Infused Olive Oil
Burger Ingredients
2 Kaiser Buns
Butter Lettuce
Tomato Slices
Red Onion, sliced
2 Slices White Cheese
Directions
Lay out all sauce ingredients on a baking sheet (except the avocado) and toss with the oil then broil until charred - approx. 1 hour on a mixture of LO & HI.
Remove from the oven and allow to cool.
Combine the charred veggies and remaining sauce ingredients in a blender or magic bullet and mix until smooth. Adjust/add seasoning as needed.
Combine all burger patty ingredients in a bowl, mix well and form into 3-4 patties. Place in the fridge approx. 30 minutes.
Heat your pan on medium/low heat, and add in a tbsp of olive oil. Cook the burgers for about 5-6 minutes per side, until golden brown. When the patty is almost cooked, add a slice of white cheese on top.
Dress the buns with the creamy salsa verde sauce and vegetables and serve! You could get crazy and turn the tomatoes into pico or add crispy tortillas strips or jalapeno slices and have some extra fun!
