Lychee Salad
This recipe looks and honestly sounds fancy but it is SO.DARN.EASY. Also …. this was my first time ever using Lychee in a recipe too and I was a little hesitant because of the texture but they are tasty and very flavorful.
We wanted a way to showcase the deliciousness that is the Lychee White Balsamic Vinegar from Evoolution and this was the perfect way to do that.
Despite it being the winter, a fresh delicious salad was definitely called for.
Prep Time: 20 minutes
Serving Size: 2 Large Salads
Ingredients
6-8 Cups of Spring Mix
1 Shallot, sliced
1/2 Can Lychees
3/4 Cup Shredded Carrots
5-6 Radishes, Sliced
1/4 Cup Pumpkin Seeds
4 Tbsp. Evoolution Lychee White Balsamic Vinegar
4 Tbsp. Evoolution Nocellara Extra Virgin Olive Oil
Pepper to taste
Directions
Combine all salad ingredients together and split evenly between 2 large bowls.
Combine the balsamic vinegar & EVOO, shake or whisk well. Drizzle desired amount on top of each salad. Voila.
