Lychee Salad

This recipe looks and honestly sounds fancy but it is SO.DARN.EASY. Also …. this was my first time ever using Lychee in a recipe too and I was a little hesitant because of the texture but they are tasty and very flavorful.

We wanted a way to showcase the deliciousness that is the Lychee White Balsamic Vinegar from Evoolution and this was the perfect way to do that.

Despite it being the winter, a fresh delicious salad was definitely called for.

Prep Time: 20 minutes

Serving Size: 2 Large Salads

Ingredients

  • 6-8 Cups of Spring Mix

  • 1 Shallot, sliced

  • 1/2 Can Lychees

  • 3/4 Cup Shredded Carrots

  • 5-6 Radishes, Sliced

  • 1/4 Cup Pumpkin Seeds

  • 4 Tbsp. Evoolution Lychee White Balsamic Vinegar

  • 4 Tbsp. Evoolution Nocellara Extra Virgin Olive Oil

  • Pepper to taste

Directions

  • Combine all salad ingredients together and split evenly between 2 large bowls.

  • Combine the balsamic vinegar & EVOO, shake or whisk well. Drizzle desired amount on top of each salad. Voila.
