JamDinners Wife Saver Breakfast

You may have heard about or even tried a classic wifesaver breakfast but if I am being completely honest … ours is WAY better! lol. Trust me.

Ingredients

  • 4 Slices of Bread

  • 4 (no more than 1/4 inch thick) slices of Ham (or if buying pre-packaged/sliced ham then 8-12 slices)

  • 8 Slices of Cheddar Cheese

  • 5 Large Eggs

  • 2 Cups Shredded Hashbrowns

  • 1/4-1/3 Cup of Milk

  • 1/4 Cup Chives, chopped

  • 1/2-1 Tsp Salt

  • 1/2-1 Tsp. Pepper

  • 1/2-1 Tsp. Garlic Powder

  • Cooking Spray

Directions

  • Pre-heat oven to 350F degrees. In a medium pan, season the hashbrowns with salt, pepper and garlic powder (or make them from scratch using our recipe here) and cook until almost fully cooked. Do not cook the whole way.

  • Once the hashbrowns are almost fully cooked remove from heat and set aside. In a small bowl, combine the eggs, milk, 1/2 of the chives and the remaining seasonings. Mix well.

  • In a glass 8x8 casserole pan lay the slices of bread flat, then top with 4 slices of cheese. Evenly lay out the ham then top with the 4 remaining cheese slices. Pour the egg mixture overtop evenly.

  • Lastly, top with the shredded hashbrowns. Bake for 50-60 minutes or until hashbrowns are golden brown and eggs are fully cooked. Remove from oven, sprinkle with remaining chives and serve with ketchup or hot sauce.


MAKE IT EASY - Opt for the classic corn flakes topping to keep it simple. Or prep it the day before, top with the shredded hashbrowns in the morning and pop it in the oven.

MAKE IT EXTRA - Shred good quality cheese in the layers instead of slices or use fresh loaf bread.
