Christmas Blondies
I find blondies are way better and easier to make because I suck at cookies and they are essentially the same but I don’t have to worry about them keeping their shape. WINNING! We made 2 different blondies with the same base ingredients and only added in extras at the end!
Base Ingredients
2 Cups of Flour
1 Cup Margarine, softened
1 Cup Brown Sugar
2/3 Cup White Sugar
2 Large Eggs
2 Tsp. Vanilla Extract
1/2 Tsp. Salt
Cooking Spray
Option #1: White Choco Cran Blondies Extra Ingredients
2/3 Cup White Choco Chips
2/3 Cup Dried Cranberries
Option #2: Peanut M&M Blondies Extra Ingredients
1 Cup M&M’s
1/3-2/3 Cup White Choco Chips
Directions
Pre-heat oven to 350F degrees. In a large bowl or stand mixer, combine the sugars and the margarine. Mix until well combined.
Whisk in egg and vanilla. Lastly, add in the flour and salt and mix until just combined.
If you are making the white choco/cran - fold in 1/2 of the white choco chips and 1/2 the cranberries using a spatula.
If you are making the m&m - fold in 1/2 of the m&m’s and the choco chips using a spatula.
Lightly spray a 9x13 pan and transfer the mixture. Make sure it is smooth and even then sprinkle the remaning toppings on the top.
Bake for 30-35 minutes or until top/edges are golden brown and an inserted toothpick comes out clean. Allow to cool then cut into squares and serve.
MAKE IT EASY - Double the base recipe and make a large batch of dough mixture and split into equal portions to do more than 1 flavor/style.
MAKE IT EXTRA - Add Macadamia nuts or other dried berries to the white choco cranberry blondies.
