Jalapeno Popper Grilled Cheese

Okay … I think this is our last grilled cheese for comfort food month! But it is so damn good!

Ingredients

  • 4 Pieces of Bread

  • 1/2 Cup Cream Cheese

  • 1/2 Cup Mozza Cheese

  • 1/2 Jalapeno, chopped

  • 1/2 Jalapeno, sliced

  • 2 Pieces of Bacon, cooked and crumbled

  • 4 Tbsp. Mayo

  • 1 Clove of Garlic, minced

  • 1/2 Tsp. Salt

  • 1/2 Tsp. Pepper

Directions

  • Combine the chopped jalapeno, salt, pepper and cream cheese together in a small bowl. In a different bowl, combine the mayo and minced garlic.

  • Spread a thin layer of the mayo on the outside of 2 of the pieces of bread and lay mayo side down on the same or a different pre-heated frying pan.

  • Spread a layer of the cream cheese mixture evenly on each slice of bread then sprinkle with a little mozza cheese. Lay our the jalapeno slices and the crumbled bacon. Sprinkle the remaining half of the cheese evenly on top.

  • Spread the remaining cream cheese mixture on the inside of the other two slices of bread and lay them on top and press down slightly. Cook over medium heat until the outside of the bottom pieces of bread start to brown. Right before you are ready to flip, spread the remaining mayo/garlic mixture on the outside of the top pieces. Flip and continue cooking until this new side browns. Remove from the pan, cut in half and serve on their own or with some soup or jalapeno popper dip.


MAKE IT EASY - Use jarred pickled jalapenos instead of buying a fresh one and then finely chopping it.

MAKE IT EXTRA - Use a fancier cheese like gruyere to replace the mozza.

MAKE IT VEGETARIAN - Omit the bacon or swap it for a meatless replacement.
